Ingredienti

3 large free range egg yolks
70 g golden caster sugar
190 ml whipping cream
180 ml full fat milk
1 large shot of espresso coffee

STEP 1

Add all ingredients to a bowl and mix well. Transfer to a pan over low–medium heat, stirring constantly.

Heat to 75°C, checking with a food thermometer.

Add to an ice cream tub, replace lid, and freeze for at least 24 hours.

Use the GELATO setting to mix.
